I made this cake today, and it was such a success I thought I'd share the recipe with you all. Our workmen approved! ;D Ingredients: Serves: 12 150g butter 220g soft brown sugar 2 tablespoons treacle 250g plain flour 1 teaspoon baking powder 2 teaspoons bicarbonate of soda 3 teaspoons ground ginger 160ml buttermilk ( you can use 150 ml milk with a tbspn of lemon juice mixed in) 1 egg, beaten 2 medium apples, peeled and chopped 1.Preheat the oven to 170 C / Gas 3. Grease a 23cm (9 in) square cake tin and line the bottom with baking parchment. 2.In a saucepan over low heat, melt the butter, sugar and treacle. Once melted, remove from heat and cool slightly. Then add the buttermilk and egg, and stir well to combine. Stir in the chopped apples. 3.In a bowl, combine the dry ingredients, then add to the butter mixture and mix gently till combined. 4.Tip into the prepared tin and bake in the preheated oven for 40 to 45 minutes*. Allow to cool in the tin before slicing and serving. * I found it needed another 10 minutes in the oven.Enjoy! ;D

This is the nicest gingerbread I have eaten.
I used my last large Grenadier apple from the orchard which is the same size as two ordinary apples. Forty-five minutes was right for my cake tin and oven.

I eventually made the cake this evening Grindle , lovely, even the worst baker couldn`t get this one wrong it was so easy . I was thinking any left over would be perfect with custard tomorrow , doubt if there will be any as I just saw another enormous lump flying up the stairs on a plate ;D

I was wondering if pears might be nice as an alternitive to apples ( saying as I have no apples left but have plenty of pears ) I``m still thinking about that custard and cake ;D

Pears would be a lovely alternative and to make a pudding with custard would be a real treat.
