Have a look at this link Shelldon. This will give you some ideas about the versatility of quinces. I have a feeling you are talking about Chaemoneles, or Japanese flowering quince. I don't bother with the fruit of this, yet lots of people do use it. I use quinces whenever I can get them and they are used in the same way as apples.
