And what have you remembered of your lesson, Roofy?
roofgardener had cooking overload last weekend..... but has been eating tasty home-cooked meals all week, back in the roof cave

dianthus can you tell me how to make lemon cheese/curd please? (what is the difference) - I would like to have a go but small jars as I live alone. How long would it keep?

dianthus can you tell me how to make lemon cheese/curd please? (what is the difference) - I would like to have a go but small jars as I live alone. How long would it keep? They are more or less the same thing, but lemon cheese would be a higher quality and fewer additives, compared with a shop-bought curd.
Mum used to buy some lump sugar and rub them over the lemon skins, to capture the oil in the zest without having any of the grittiness. It should keep for a few weeks in the fridge, so making a small amount, in small jars, is the best option.
Unfortunately, I don't have her old recipe, and a match for Gale's, circa 1980, isn't the nicest of tastes!
Do you have a recipe you wish to try?
