Put into a pot:
1/4 lb unsalted butter 1 cup sugar 1 cup water 1 tsp bicarb soda 4 oz mixed fruit 2 oz walnuts _______________
2 oz cherries
Bring to the boil and cook slowly for 20 mins. Add cherries before removing from heat. Take off heat and let stand for a few minutes. Then add:
2 well beaten eggs 2 cups SR flour
Put into lined tin (bread tin is good)and bake in moderate oven for one hour.
TIPS
My oven cooks this at 155 deg C.
