I had to move this as it's the only place i have this recipe now I love this cake, it's addictive!! 175g (7oz) self raising flour 200g (8oz) caster sugar 1 x 2.5ml(1/2 tsp) salt (Optional,I never use salt in my cooking) 25g (1oz) cocoa 100g (4oz) marg 2 medium eggs beaten with 5 Tbs(75ml) evaporated milk 5 Tbs(75ml) water few drops vanilla extract. Sieve flour,sugar,salt and cocoa Rub in margarine Stir in eggs, extract and liquids. Beat well Grease and flour 2x 20.5 (8") cake tins, not loose bottomed as the mixture would run out. Divide mixture between them. Bake at 180c, gas mark 4 for about 30-35 mins. Cover with icing when cool. Although the recipe says to bake in 2 tins i usually do it in one 8" square one.

Thank Goodness, this is my Grandsons favourite, he doesn't eat any cake but this one and insists on this one for his birthday. I can't remember the icing i used!! My brain has more holes than the sieve.

It looks good enough to eat...Yum....Yum.... Its a pity there's no call for much baking in our house these days....unless we get visitors
