I adapted this recipe for the breadmaker because I could not buy the Wright's Focaccia kits anywhere. Now I know I can make it.
INGREDIENTS:
300 ml tepid water 1 1/2 tsp dried yeast 500 g strong white flour 1 1/2 tsp salt 1 tsp sugar 3 tblsp olive oil plus extra for greasing extra virgin olive oil for drizzling Maldon sea salt rosemary
METHOD:
Use the dough setting and load up in the right order according to the breadmaker instructions.
Preheat the oven to 200 deg.
I made four loaves from these ingredients using sponge tins. Create a dimpled effect by repeatedly pushing your fingertips gently into the surface of the dough. Drizzle a generous amount of extra virgin olive oil evenly over the dough. Sprinkle over the sea salt and push the small pieces of rosemary into the dough. I used sage leaves as well.
Cook for about 30 mins until the top looks crusty.
Focaccia freezes well. Defrost and warm up when it is wanted.
I made this today, March 2015, and covered the Focaccia with caramelised onions as well as fresh sage, rosemary and thyme. It was even better.

You will love it Lou. I am having it tonight with risotto which is also a favourite. The focaccia was made for the LAA (Light Aircraft Assoc.) course on Saturday.
I have very small Italian bowls for the really good olive oil and I dip the focaccia into this at the table. I don't know what the dishes are called.

Thanks Cherry, I shall be trying this one too, I love Italian bread. I have discovered the best tasting olive oil and balsamic vinegar at our local food festival. I have been buying Italian bread to eat with it because my own has never been that successful.

WF I am not too keen on balsamic although I have a good one. I choose my olive oil carefully, and the one I have came from France when I was there. I just love it. The oil in the recipe was virgin oil too, but a more normal quality.
