BANANA YOGURT MUFFINS Preheat oven 375ºF (190ºC) 12-cup muffin tin, greased Ingredients: 1 2/3 cups All purpose flour 2/3 cups Whole wheat flour 1 teaspoon Baking powder 1 teaspoon Baking soda ½ cup Butter, unsalted, softened ½ cup Cashew or walnuts, chopped 1 piece Egg 2/3 cup Pureed bananas ½ cup Vanilla yogurt 1 cup coarse sugar (where I am coarse sugar is the brown one, but regular white kind works just as well)
Procedure:
In a bowl combine all dry ingredients such as flour, baking powder and baking soda. With a pastry blender or by hand, using finger tips, cut in butter until mixture is crumbly, add nuts.
In another bowl combine egg, bananas, yogurt and sugar. Add to dry ingredients; stir just until blended. Do not over mix muffin batter.
Spoon batter into prepared muffin tin, dividing evenly. Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted in center comes out clean.
