I love this cake, it's a new Hairy Biker recipe i have been using.
200g butter. 2tsp cardamom pods 225g caster sugar 3 large eggs 300g self raising flour 1tsp baking powder 200ml semi skimmed milk
Topping...
3 heaped tbsp demerara sugar 40g flaked almonds.
Pre heat the oven to 190c/fan 170c/gas 5. Grease a 20x30cm cake tin and line with greaseproof paper (i don't usually grease and line, it's not necessary)
Put the butter into a sauce pan and melt slowly, put to one side to cool.
Break open the cardamom pods with a pestle and mortar. Then crush the seeds, you need about 2 tsp. set aside.
Put the sugar and eggs into large bowl and beat with an electric whisk untill pale and light. Add cardamom, flour,baking powder,cooled melted butter and a little of the milk, whisk untill just combined.
Gradually add the rest of the milk whisking constantly untill the batter is smooth and is the texture of double cream.
Pour into the prepared tin.
Mix together almonds and sugar and sprinkle over the top of the cake.
Bake in the centre of your oven for about 30/35 mins or untill well risen and golden brown. Check it's baked with a skewer. bake for a bit longer if it doesn't come out clean.
Leave the cake to cool in the tin for about 30 mins.
Then eat!!!

I shall give this a try very soon. It is nice and simple, compared to the Zucchini cake which I put on the forum which is a bit of a fuss. I should have it made very soon. Yum!

As you know, I'm trying new cake recipes - but I hesitate to try cardamom, although the description I found is that they taste gingery. Is that right? Are they easy to find in the shops?

I don't think so and if the comparison is ground ginger, cardamon is much nicer. I buy mine at a Middle Eastern store in Cambridge, but have a look in good supermarkets like Waitrose.

I got my cardamom in tesco Geranium, it's not really like ginger at all. I can easily send you a few pods to save buying a whole tub you might not use up.

I wish i could describe the flavour Geranium, it's not spicy, but i just don't know how to say what it is apart from we like it ;D ;D

I melted the butter, found the tin which I had not used for so long it needed washing, lined it, washed the pestle and mortar because it had ginger and garlic sitting in it and generally got most of the ingredients ready, then found I had no cardamom. Normally, I have the fat black ones, the small white ones and green ground cardamom. I can't get this at our Tesco, so they are on a list for Ely or Cambridge.
Meanwhile, I made oat and nut cake, which is nice, but very heavy. I had to use the melted butter and this recipe uses the baking tin.

My latest effort was a lemon drizzle cake. It tasted wonderful, but the texture wasn't right. I suspect it was because I should have warmed the butter beforehand. Never mind - I have another recipe to try - for Ginger and apple cake.
