My sweet peas still look like green sticks in a pot so I am going to start again. Not throwing the originals away, just going stick them in a bigger pot with a wigwam and let them get on with it. Not the started that I had hoped for but at least I didn't kill them.

As long as you have two or three pairs of leaves that's all you need at this stage. When you pinch out the growing tip, what grows from the leaf joints is what you want.
