INGREDIENTS - 2 eggs - 175g caster sugar - 85g melted butter - 75ml milk - 1/2 tsp vanilla extract - 2 tsp baking powder - 125g plain flour - 1/2 tsp ground cinnamon - 1 large cooking apple
METHOD 1. Preheat the oven to 200C/gas 6. Line the base of a 20cm square cake tin with parchment paper. Grease the sides 2. Whisk the eggs, caster sugar and vanilla extract in a large bowl until the mixture is thick and mousse-like (5 minutes) 3. Melt the butter with the milk in saucepan/microwave, then pour onto the eggs, whisking all the time 4. Sift in the flour, cinnamon and baking powder and whisk/fold carefully into the batter so that there are no lumps of flour 5. Pour the mixture into the prepared tin and smooth the surface 6. Slice the apples and arrange over the batter 7. Sprinkle over a tablespoon of Demerara sugar (any sugar ok) and bake in the oven for ten minutes at 200C 8. Reduce the temperature to 180C/gas 4 and bake for a further 20–25 minutes or until well risen and golden brown 5. Remove the cake from the oven and allow to cool in the tin. Cut into squares and serve warm with cream or hot custard

I made it for friends the past two Saturday nights, must admit it went down very well both times OH wants it tonight when he gets home from work
