Base
3oz crushed digestives 1 1/2 oz melted butter 1 oz demerara sugar
Mix together a line an 8 or 7 inch loose bottom tin
Topping
Juice and zest of 3 lemons 200g creamcheese 1 can condensed milk
Mix creamcheese and condensed milk - beat well to get rid of all lumps. Add the juice and zest of the lemons. The mixture will thicken up. Pour onto base. Chill. The cheesecake is ready to eat in about 30mins!!!!!!!!

A lady at WI makes a lemon cheesecake with condensed milk, and this sounds similar. It is very nice, so I will try it. It must be very rich.

yep it was ready in 35 mins and lasted less than 10 once we all started on it.

I love condensed milk too Cherry, my Nan always put it in her tea during the war, and used to give me a spoonful at the same time, a real treat for a 3 year old who had never had sweets ;D When I was pregnant with my first child I got a sudden yearning for condensed milk and consumed a whole tin of the stuff I'm definitely going to make this cheesecake ;D

I wouldnt allow seconds until we had all finished the first portion and OH took his time deliberately. The girls and I were drooling in anticipation of seconds.

As kids we used to eat condensed milk out the tin, my grandad used to have it in his tea, he wouldn't have milk.

This is really good Bists. It is even BETTER than the lady in the WI makes. Hers is a bit runny and tastes far too rich. This is great and does not taste strongly of condensed milk, even though I love it. ;D
