Cherry/Steve suggested I repost my previous post in recipes. I have a fair crop of Chilli Cayennes (reliable outdoors) so to store them I make chilli flakes. After picking the crop I place them on newspaper next to the boiler in the airing cupboard. Even the green ones ripen and shrivel up in the warm super dry atmosphere. After 6 weeks they look like picture 1. As dry as they'll ever be. I cut off the green stalks with scissors and place all the chillis in the food processor. A couple of quick bursts and they're done. I pour the lot, seeds skins, powder included into clean dry jars. This will store a long time, I still have a full jar from last year in perfect condition.
