I make this when OH goes out, for a treat. The recipe below is for one person. Halve and bake a medium sized potato. Fry a small onion and two rashers of bacon. Grate some strong cheddar cheese. When the potato is cooked (about an hour) leave it to cool for a few minutes, then scoop out the insides into a dish, mash with some milk, add the onion/bacon and grated cheese. Pile the mixture into the empty skins and grill the potatoes until the tops are lovely and golden brown. I add a few cherry tomatoes to the dish when I grill it. Enjoy!

Good call Geranium. I LOVE stuffed baked spudlinks. I sometimes add a large dollop of cottage cheese, with a couple of tablespoons (or more) of chopped chives. I've never tried it with bacon before; I will be sure to give this a shot over the weekend. I also like to REALLY hard-bake the spuddlink so the skin is really thick and crispy.

I harvested my last two Spudlink bins on Sunday Geranium, and baked one of them. I mixed the scooped-out potato with a bit of milk (as you suggested), and finely-chopped roof-grown spring onions, and some of my Mum's Green Tomato Relish (made from HER home-grown tomatoes). Drizzled with cheese, and topped with sliced roof-grown tomatoes, grilled, and served with steamed mushrooms and peas. Yummy !
