500g split peas 2 rashers bacon, diced 2.5 litres water 1/2 tsp freshly ground black pepper 1 sprig fresh thyme 1 bay leaf 1 ham bone 2 carrots, diced 1 cup sliced celery 2 tblsp lemon juice Cover peas with cold water and soak overnight. In a large saucepan, add onions and sauté until golden. Add drained peas, water, pepper, thyme and bay leaf. Add ham bone. Bring slowly to the boil, reduce heat and simmer, half covered for 1 hr. Add carrot and celery, continue for another hour. Remove the thyme and bay leaf, take out ham bone, cut all the meat from bone, removing any excess fat and skin and return meat to soup. Add lemon juice just before serving. Smoked, cut up sausages, such as Mattessons from supermarkets can be added when it is cooked. _________________ I used to make this in Australia, and Moira recently asked for the recipe. Lou78W's pease pudding reminded me and I might make this soup next week for my younger son, because I will move to his flat soon. If I haven't got a lemon, I just leave it out.
