Spelling has never been a strong point of mine, and I often get it wrong, but I've noticed recently that when I write the words 'colour' and 'centre' on a web page like this, or in an email, they get underlined in red ... although I know these to be the correct spellings. This annoys me. Have the spellings of these words been changed now ? and if so, WHY ? I think they were all right as they were.

You can change your language settings to English UK:
Control panel
Clock Region Language Select UK version instead of American version, which is currently highlighted.
Hope that sorts it for you.

In addition to what dianthus said above, it MAY also be necessary to download the UK Spellchecker dictionary for your web browser. (firefox, IE, Edge etcetera).

I find it fun to insist on British spellings.

Apparently I've already got the UK spelling version but it still underlines those words

Most annoying Eli... but could we narrow this down ? Is this happening only on websites, or do the same words trigger "underlines" in.. say .. Microsoft word ? (if you have that installed ? ). This would help us determine wether the issue is limited to just a web browser program, or the operating system itself.

I reread your initial post, Eli
If you are posting on American sites, then they would use their spellings. Word should be able to be set to UK spellings, though.

Not necessarily, dianthus. Usually, the spell-check is a function of the client computer, and not the host website/forum ?

It happens on forums. It doesn't happen when I write emails, but I hadn't noticed. I saw it on forums and just thought it was on emails as well (That may sound daft to computer literate people but I am not one of those) and I send very few emails anyway.
