This is not made from 'homegrown produce' but is a handy recipe for the present times if you like to make your own bread but can't get hold of yeast or certain flours etc. It's rustic but very tasty.
It's taken from Liam Charles' 'Cheeky Treats' book with a few notes added by me.
I can't get hold of buttermilk locally at the moment but have found that you can make your own substitute by putting 200ml of milk (or however much is needed for your recipe) & stirring a tablespoon of lemon juice into it & setting aside for around 5 or 10 minutes until it looks slightly curdled - you can then use this as it is instead of bought buttermilk.
Quick Soda Bread
Ingredients
125g Plain Flour + some for dusting
125g Plain Wholemeal Flour/Wholemeal bread flour
1/2 tsp. Bicarbonate of Soda
1 tsp. fine sea salt (table salt will do or I used sea salt flakes crushed up)
200ml buttermilk (or 200ml milk & tablespoon of lemon juice mix)
4 tbsp. mixed seeds (I used pumpkin seeds as that was all I had in but you can use any mix or separate seeds such as sesame/poppy/pumpkin etc.)
Heat oven to Gas 6/ 180 C & line a baking tray with baking paper or similar
Method
Mix the flours together in a bowl with the bicarb & salt.
Make a well in the centre & pour in about half the buttermilk & work the flour into it with your hands, gradually add the rest of the buttermilk & mix into the flour until you get a sticky dough.
Tip the dough onto a floured surface & knead the seeds into it.
Shape it into a ball & slightly flatten it.
Put it onto the baking tray & cut a deep cross into it so that's it's almost cut into quarters & dust the top with flour.
Bake for about 25 minutes until it's hollow sounding when you tap it on the bottom.
