I've noticed these celery stems starting to root and sprout, and I am thinking of planting them to see if I can get celery plants from them. I wonder if anyone has tried this in the past and if so what results did you get, and would they grow in my raised bed ...

I've never tried it either Eli but they look raring to go/grow so I'd give it a try.

Yes it will be interesting to see what happens Eli, Celery is classed as biennial and if left in the ground it would go to seed in its 2nd year, so depending on if it acts as a new plant or not? At the very least you should get a lot fresh seed to sow next year
