What you need....6oz soft marge (sorry, I don't do metric yet!) 6oz castor sugar 6oz S.R. flour 2 eggs 1 lemon 4oz granulated sugar.
What you do......Beat marge, castor sugar and SR flour together Add lightly beaten egg and grated lemon rind Put in a lined loaf tin that's large enough to have a space at the top when risen. Bake in moderate oven (325 or 160)until risen (25-30mins) Mix lemon juice with granulated sugar and pour on top of cake as soon as you take it out of oven. Leave to cool in tin.
PS. MG's alternative version.... chuck all ingredients in food processor, (except for juice and gran sugar) and whiz it round. Then slam it in a tin, throw it at the oven and go out and garden for half an hour! When you smell burning, come back in and put the fire out with lemon juice and sugar!!

Does this freeze and if so how long for?
I need simple, quick cakes I can bake and freeze for my open day.

I liked the sound of the alternative method. I will probably end up going with option 1, nip down to Tesco the day before and buy cakes ;D
But just in case there is a day when baking a cake is preferable to all the alternatives it would be handy to freeze it.

Yes Sue it does freeze. I have one in the freezer just now. I make about four batches and put it in bread tins for easy slicing and I do cut down on the sugar. When I do x4, I like to add limes to the lemons because lemon and lime is quite delicious. I don't know how long it freezes for. Mine are often in the freezer for months rather than weeks even if they should not be so long. I am the freezer queen here. There are always pilots to cater for.

Thanks Cherry. They are needed for July so even if I made them today they wouldn't be in too long. I'll try adding some lime, I prefer lime to lemon.
